Pigs in blankets feast

Roasted all in one dish, this is an easy way to cook a tray of Christmas deliciousness and to save on the washing up. Perfect to add to your Christmas lunch or as a meal in one tray for Boxing Day, says Miranda Gore Browne Serves 6

Ingredients

  • Half a butternut squash, peeled and chopped
  • 3 red onions
  • 2 eating apples
  • Rapeseed oil
  • Chilli flakes
  • 12 chipolatas
  • 12 stuffing balls
  • 12 smoked streaky bacon rashers
  • Cranberry sauce
  • Cheese, I use Somerset brie, but Stilton or Cheshire cheese is delicious too

Method

  1. Peel and chop the butternut squash and red onions into chunks. Peel the apples and slice into halves or quarters depending on their size.
  2. Line a roasting tin with non-stick baking paper or a tin liner.
  3. Put the onions and butternut squash into the lined tin. Drizzle with rapeseed oil and sprinkle with some chilli flakes.
  4. Roast at about 180 degrees, covered in foil for about 30 minutes.
  5. Wrap 12 slices of smoked streaky bacon around 12 chipolata sausages and add them to the tin with the stuffing balls to roast for about 20 minutes or until they are fully cooked.
  6. Take out of the oven, add chunks of Stilton, brie or Cheshire cheese and a few tablespoons of cranberry or redcurrant sauce. Pop back into the oven at a lower temp (about 140 degrees) until the cheese has melted and the sauce is bubbling (this will only take about five minutes).
