Decorated chocolate- chip biscuit slab

What could be lovelier than a chocolate- chip biscuit slab to decorate with a loving message and sugar flowers for Mothering Sunday. We hope you enjoy making yours as much as we loved making and decorating ours!

Ingredients

You will need

Traybake tin (approx. 24cm x 33cm) – don’t worry if yours is smaller, it will just mean the biscuits are slightly thicker. Or halve the ingredients to make a smaller slab. Plus, a large bowl, non-stick baking paper, food bag or piping bag, scissors to snip the end off for piping, sugar flowers or sprinkles.

  • 200g granulated sugar
  • 300g soft light brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 500g self-raising flour
  • ½ tsp salt
  • 2 tsp bicarbonate of soda
  • 150g milk chocolate chips
  • 100g dark chocolate chips
  • 100g white chocolate chips (to decorate)

Method

  1. Cream together the butter, granulated and brown sugars and vanilla extract in a large bowl until well combined.
  2. Add the eggs and mix well until creamy.
  3. Sift in the flour, salt and bicarbonate of soda and mix in gently.
  4. Stir in the milk and dark chocolate chips.
  5. Line a baking tin with non-stick baking paper.
  6. Preheat the oven to 180 degrees.
  7. Tip the dough into the lined tin, spread out evenly, little fingers will enjoy squashing down the dough!
  8. Put in the middle of the preheated oven and bake for about 20 minutes, carefully turn it around and bake for about 10 more minutes.
  9. Once it is golden and starting to colour around the edges, take it out of the oven and leave to cool and harden completely in the tin.
  10. Melt the white chocolate chips gently in the microwave and spoon into a food bag or piping bag. Leave to cool and for the white chocolate to be a bit finer. Snip off the end and use this to pipe ‘Mummy’, ‘Mum’ – or your choice of name or message on top.
  11. Use the same melted chocolate to stick on the sugar flowers and to decorate.
  12. Wrap or serve on a pretty board or plate.
  13. Cut into thin bars using a sharp knife.
