Ingredients

  • 250g plain flour
  • 1/2 tsp salt
  • 50g sugar
  • 1 tbsp baking powder
  • 85g cold butter, cut into pieces
  • 2 large eggs, beaten
  • 80ml fresh cream
  • 1/2 tsp vanilla extract
  • 1 tbsp lemon zest
  • 100g fresh blueberries
  • 2 tbsp melted butter
  • 2 tbsp sugar

Remember to look for the Red Tractor logo or British flag when shopping for your ingredients. 

Directions

  1. Preheat the oven to 190C.
  2. Sieve the dry ingredients together in a bowl. Add the butter and rub it into the dry ingredients with your fingers.
  3. Stir the eggs, cream, vanilla extract, and lemon zest together, and add to the dry ingredients.
  4. Stir until combined, then stir in the blueberries.
  5. Place the dough on a floured counter. Pat it into a 3cm thick rectangle. Use a cookie cutter or cup to cut the dough into circles.
  6. Brush the scones with melted butter, and sprinkle with sugar.
  7. Bake for 20 minutes, or until lightly browned. 
  8. Cool completely on a rack and enjoy!
