Miranda Gore Browne says: Sticky plums and mellow apples piled with knobbly buttery crumble and puddles of fudgy salted caramel sit happily on top of a layer of crunchy brown sugar shortbread. This is a perfect recipe to make for friends and family for Bonfire Night.

Ingredients
300g unsalted butter
160g soft brown sugar
350g plain flour
100g cornflour
Pinch of salt
50g oats

For the fruit layer:
3 eating apples, peeled and thinly sliced
8 plums stoned and thinly sliced
50g plain flour
50g caster sugar
A pinch of cinnamon

For the salted caramel:
50g unsalted butter
50g soft light brown sugar
1 can of condensed milk
½ tsp of flaky sea salt

Method

  • Cream together the butter and sugar, and mix in the dry ingredients.
  • Press about two-thirds of the mixture into a lined baking tin and then bake at 170 degrees for about 20 minutes or until a pale golden colour.
  • Take out of the oven and leave to cool.
  • Add 50g oats to the remaining mixture and put to one side – this will make the crumble topping.
  • For the fruit layer, slice the plums and apples. Toss in the flour, sugar and cinnamon.
  • Evenly layer the fruit on top of the baked shortbread base.
  • Turn the oven up to 180 degrees.
  • Sprinkle the crumble topping over the top of the fruit.
  • Put into the oven to bake for about 30 minutes.
  • Whilst it’s in the oven, make the fudgy salted caramel. Put the butter, soft light brown sugar and condensed milk into a large pan.
  • Melt together and stir, then bring to the boil and simmer for about 3-4 minutes.
  • Remove from the heat, add the salt flakes to the caramel, then pour out of the pan into a bowl, as otherwise it will continue boiling and overcook.
  • Take the traybake out of the oven, pour over the caramel.
  • Eat warm as a pudding or, chill in the fridge and cut into as many slices as you want. Keeps well in the fridge for about three days or can be frozen for up to three months.
