The showstopper Great British sandwich

Inspired by the showstoppers on the Great British Bake Off, this whopper of a sandwich is a real celebration of the great British sandwich and British farming.

I used one of my homemade sourdough loaves, but use any round and fat loaf. I carefully sliced the loaf horizontally to create the layered cake effect. We then spread it with butter and added these delicious fillings: 


Bottom layer

Chicken, tarragon, apple and mayonnaise

Middle layer

Ham, cheddar, tomato, lettuce

Top layer

Egg mayonnaise with chives and watercress

Chicken, tarragon, apple and mayonnaise

In a bowl mix together: 

  • 200g roast chicken, shredded
  • 6 tbsp mayonnaise
  • Juice of 1/2 a lemon
  • 1 small red apple, cored and finely chopped
  • Chopped fresh tarragon or mint
  • Salt and pepper

Egg mayonnaise with chives

In a bowl, mix together: 

  • 6-8 eggs, hardboiled, cooled and peeled
  • Good quality mayonnaise
  • Salt and pepper
  • Fresh chives, finely chopped
  • Top with watercress
